Crock Pot Curry

Ingredients

2 medium sweet potatoes,cubed
1 onion, chopped
1 bell pepper, chopped
1 carrot, diced
2 medium tomatoes, chopped
8 oz of white button mushrooms, cut in half
1, 6 oz can of tomato paste
3/4 cup of water
1 tsp of minced garlic
2 TBSP of curry powder
2 tsp of ground cumin
1/2 tsp of salt
1 half of a cauliflower head, cut into florets

Directions

First chop all veggies then add the tomato paste, water, curry powder, ground cumin, salt, and garlic. Turn slow cooker on low for 9 hours. Enjoy after a long, chilly day!
