Garlic and Thyme Mushrooms

4 Tbsp. olive oil
4 garlic cloves, finely minced
1 tsp red pepper flakes
1 tsp sweet paprika
1/2 lb. white button mushrooms
1 Tbsp. fresh lemon juice
1/4 cup dry white wine
salt and freshly ground black pepper, to taste
2 Tbsp. chopped fresh thyme


Heat olive oil in a saute pan over medium heat. Add the garlic, red pepper flakes and paprika and sauté until fragrant, about 1 minute. Increase the heat to high, add the mushrooms, lemon juice and wine. Stir well and sauté until the mushrooms are cooked, about 5 minutes. Season with salt and black pepper, sprinkle with thyme and serve.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves Ooooby!
