3 or 4 carrots, peeled (or at least scrubbed) and cut diagonally
2 T squeezed lemon juice
2 T tahini
1 T water
3 cloves garlic, minced
2 t sumac (if desired, otherwise use salt)
2 or 3 T chopped parsley (to sprinkle on top)
