Lime Marinade for Fish

1 tbs quality oil
1/2 tsp Dijon or mild mustard
1/4-1/2 freshly squeezed lime juice
1/4 tsp grated or ground ginger
1 clove garlic, smashed
1/4 tsp cayenne pepper or dash of hot pepper sauce
Firm fish steaks per person (salmon, hoki, kingfish or similar)


Whisk all the ingredients of the marinade together. Coat the fish and leave to marinate in a suitable covered container or a large ziplock bag in the fridge. Leave for 45- 60 minutes before cooking. Drain off excess marinade and discard. Grill fish to your liking.
