Mini Eggplant Parmigiana

Grilled Eggplant, sliced
Your favorite tomato sauce
Fresh Mozzarella, sliced
Fresh Basil and/or Fresh Oregano


Prepare a baking dish with cooking spray. Layer the ingredients beginning with eggplant, tomato sauce, herbs, mozzarella. Add to this stack another slice of eggplant, another mozzarella slice and finish with tomato sauce and herbs. Bake at 180 for about half an hour, until the cheese is nicely melted and beginning to brown on top.

I love getting my box of fruits and seeing the delicious colours and smells as they ripen. I have some standard grocery items too and love the quality of the sourdough bread and eggs.
