Parmesan Roasted Asparagus

1 bunch asparagus
½ c parmesan, grated
½ c bread crumbs, seasoned with salt and pepper (and chilli flakes for extra zing)
1 egg, beaten


Give the asparagus a rinse and discard the tough end. Combine parmesan with bread crumbs in a wide bowl or on a plate. Dip each asparagus spear in egg and then in breadcrumb mixture. Arrange on a baking sheet coated with baking paper and roast at 180 for about 15 minutes.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves Ooooby!
