Roasted Red Potatoes & Broccoli

Ingredients

·2 broccoli crowns, chopped into florets
·4 small red potatoes, roughly chopped
·5 cloves garlic, finely chopped
·2 tablespoon extra virgin olive oil
·1 teaspoon salt
·1 teaspoon dried oregano
·1 teaspoon dried basil
·1 teaspoon dried thyme
·1/4 teaspoon dried Rosemary
·1/4 teaspoon black pepper
·1/8 teaspoon cayenne pepper
·1 teaspoon fresh lemon juice
·Parmesan cheese (Vegan)

Directions

Preheat oven to 350°F. Add broccoli and potatoes to a mixing bowl and drizzle in the olive oil, along with the salt, pepper and dried herbs. Gently mix all the ingredients together. Spread out the broccoli and potatoes evenly on a baking tray. Place in the oven for 25 minutes, or until broccoli starts to brown. Remove from the oven, then squeeze fresh lemon juice on top of the veggies and toss gently. Grate Parmesan on top, then serve and enjoy!
