Roma Tomato Salad

Ingredients

6 roma tomatoes, quartered lengthwise
1 to 3 garlic peeled and minced (or sliced)
bunch of fresh basil, cut into thin strips
2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
30g feta cheese, crumbled
salt and freshly ground pepper to taste

Directions

In a large bowl, toss together tomatoes, garlic, basil, olive oil, balsamic vinegar, salt and feta cheese. Chill in the refrigerator for 10 minutes and add fresh pepper before serving.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves Ooooby!
