Spinach and Rice Pilaf

1 onion, diced
1 carrot, diced
3 cloves garlic, minced
¼ c pinenuts or slivered almonds
2 c cooked rice
4 T butter
4 T olive oil
½ c heavy cream
4 c water or vegetable broth
2 or 3 handfuls spinach
salt and pepper to taste


Saute onion, carrot, garlic, nuts and rice in butter and olive oil until lightly brown. Add cream and simmer 2 or 3 minutes. Add spinach, water or broth and season to taste. Cover and simmer until liquid is absorbed, about 15 minutes.

The service provided is second to none and the best thing is that I have discovered how to cook delicious, sustainable vegetables I have never eaten before. I absolutely love the surprise each week when I discover what is in the box.
