Steamed Artichokes with Thyme and Garlic Vinaigrette

2 artichokes, cleaned and trimmed
Juice of 1/2 lemon
3 T thyme leaves
2 garlic cloves
sea salt
1/2 C olive oil
2 T balsamic vinegar


In a large pot, gently steam artichokes and lemon, about 40 minutes or until the leaves are tender. Drain the artichokes completely, upside down. When cool enough to handle, take a spoon and simply remove the 'choke' (the hairy fiber in the middle of the artichoke) as it's not edible.) Place all the vinaigrette ingredients in a blender and blend until smooth. Refrigerate until ready to use. Serve with the artichokes and warm bread.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves Ooooby!
