Stone Fruit Crumble

Ingredients

Filling:
2-3 plums, pitted and diced
2-3 nectarines, pitted and diced
1 cup pitted cherries, halved
1 tablespoon cornstarch
2 tablespoons coconut sugar
½ teaspoon cinnamon
pinch of salt

Topping:
1.5 cups rolled oats
2 tablespoons maple syrup
2 tablespoons melted coconut oil
½ teaspoon cinnamon
pinch of salt

Directions

1. Preheat oven to 350 degrees 2. Combine filling ingredients together in a large bowl 3. In a separate bowl, mix all topping ingredients until a wet, crumbly consistency is reached 4. Spoon fruit filling into dish and level out 5. Sprinkle crumble topping over fruit 6. Bake for about 30 minutes, or until fruit is fork tender and topping is lightly browned 7. Remove from oven and allow to cool a bit, then serve with cool whip
