Stuffed Kamokamo

1 kamokamo
olive oil
3 eggs
1 cup yoghurt (unsweetened)
2 tsp cornflour
handful Parmesan cheese
pinch of nutmeg
1 onion
100g of beef or lamb mince
100g tomato paste
1 chunky chopped tomato (fresh or from can/jar)


Cut kamokamo in half lengthwise. Scoop out the seeds in the centre. Dice onion and fry in oil until light brown. Add mince and fry for 5-10 min until cooked through. Add tomato paste and tomato. Mix through and fry for 2 minutes. Stuff kamokamo with the mince filling, 3/4 filling the insides. In a glass bowl beat eggs. Mix cornflour and yoghurt together, then fold into the eggs. Mix Parmesan cheese and nutmeg through the eggs & yoghurt. Pour the cheese sauce over the filling. Put kamokamo on to bake for 35 minutes until golden brown.

It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves Ooooby!
