Turkish Stuffed Green Peppers

10 sweet bell peppers
250g lean minced beef
1.5 cups rice
4 medium sized onions
4 cloves of garlic, finely chopped
4 tbsp tomato puree
2 tbsp parsley
1 tbsp dried mint
2 tsp ground black pepper
1 tsp chilli powder
1/4 tsp cumin
3 tsp salt
1 tbsp lemon juice
1/4 cup olive oil
1.5 cups water


Cut the peppers in half lengthwise. Prepare the filling by combining the rice and minced beef with all the remaining ingredients in a large bowl. The spices really enrich the flavors in this recipe, so use them all. Stuff the peppers with the filling and cook them in a shallow pan. When stuffing the peppers, make sure you leave enough room for the rice to cook.
