This loaf is leavened solely with our Organic White Leaven. The flour in the leaven constitutes 30% of the total flour in the recipe. We use a combination of Marriage’s Organic Strong White Flour and Gilchesters’ Organic Stoneground White Flour to create a crusty loaf with an open crumb, indicative of extended fermentation. A 48-hour process is used where the shaped dough pieces in bannetons are retarded overnight before they are baked in the oven.

Raised entirely with a natural wheat levain, this loaf contains only the finest organic white bread flour, plus some salt and water. The golden-brown crusty exterior leads to a wonderfully-open translucent white crumb, indicative of a well-fermented loaf of bread. It is available as an 800g loaf, in an oblong shape, and is baked directly on the sole of the oven to achieve the true character of this type of bread.
