A traditional handmade farmhouse cheese in a 150g wedge. Carrick has a deep, nutty and earthy flavour. The aroma is rich and earthy, and the texture is firm and with a creamy finish. It will dry naturally with age.

All our cheeses are made with vegetarian rennet with traditional methods used throughout. The cheeses are matured on wooden shelves and are turned weekly by our knowledgeable staff.

We produce traditional cheeses and luxury ice cream made with organic milk from our own dairy herd, where we keep the calves with their mothers to suckle. Rainton Farm is the first commercial dairy in the UK to be following the cow with calf method, demonstrating that cow with calf dairy farming is viable and sustainable at scale. Our ethical dairy model is based around treating the animals, the land, our environment and the people who work here with respect and kindness.
