As more and more of us turn to eating less meat and dairy, The Hairy Bikers have just released their Veggie Feasts Cookbook. The Paddock will be offering a selection of Veggie & Vegan Recipe Boxes, inspired by The Hairy Bikers Veggie Feasts Cookbook which Si King has kindly agreed to share with us.
Each Recipe Box comes with all of the ingredients you will need to recreate one recipe from the book. All Organic, All supplied by The Paddock & Stocked in our online shop. The recipes are designed to be easy to do, seasonal and encourage you to try new ingredients and new ways of cooking veggie & vegan meals.
We have assumed for some recipes that you will already have many of the cupboard staples used such as herbs, spices, cooking oils, salt & pepper for example, but all can be bought as extras from our online shop.
Each recipe box comes complete with a recipe card, and all of the ingredients to make a meal.
This recipe box provides all of the ingredients you will need for The Hairy Bikers Roasted Aubergine Pasta, with recipe card including:
1 x 400g Carleschi Organic & Plastic Free Spelt Mezzi Rigatoni
2 x Aubergines (approx 500g or more)
1 x Onion
1 x Garlic Head
1 x Tin of Organic Chopped Tomatoes 400g
1 x Jar of Organic Mixed Olives 175g
1 x Jar of Organic Capers in Olive Oil 180g

We have assumed for this recipe you will have in your store cupboard; olive oil, salt, black pepper, 100ml red wine, chilli flakes, ground cinnamon & vegetarian cheese (optional). Vegetarian Cheese can be purchased in our online store as an optional extra.
